CHHENA GAJA

Chhenagaja is a sweet dish from Orissa, India. Unlike some other popular chhena-based Oriya desserts, such asrasagolla, which have spread throughout India, the chhenagaja remains largely popular within the state itself.


Although the ingredients of chhenagaja are essentially the same as that of rasagolla and chhennapoda, the dishes could not differ more in taste.


One of the best places to savorchhenagajas is Pahala, near Bhubaneswar. However, chhenagaja is equally popular all over Orissa.

INGREDIENTS
  • Full cream Milk-500ml
  • Lemon Juice-2tsp.
  • Maida-2tsp.
  • Sugar-1 cup
  • Water-3 cups
  • Rose water-1tsp.




PREPARATION
  • Boil Milk and curdle it by adding Lemon Juice. Keep stirring.
  • Drain the curded milk through a thin muslin cloth and squeeze the Chhena. Wash it under running tap water.
  • Drain out the excess water, add Maida in it, knead well and make small rectangular pieces with your palms. Set it aside.
  • Make Sugar syrup by adding and heating water and Sugar in a pan till it attains desired consistency.
  • Add Chhena pieces to the syrup and cook for 10-15 minutes with lid partially covered.
  • Remove from the flame and let it cool.
  • Add Rose water, take out Chhenagajas from the syrup, place on tray and allow it to Refrigerate.
  • Take out from Refrigerator and ChhenaGaja is ready to serve.
